| Most cooking processes involve oils and grease. As foods are changed from one form to a more desirable one, oils and grease are boiled off as a vapor, then recondenses as it cools and deposits itself in the form of medium to heavy grease. Some are of the large, grease droplets requiring heavy-duty grease filters at the hood to remove it. The bulk of the airstream consists of fine oil smoke and hydrocarbons which require a more sophisticated filtration device |

| The Smog-Hog is a two-stage electrostatic precipitator that effectively collects and cleans grease laden air, smoke, and reduces odors associated with cooking operations. The contaminated air first passes through a mechanical prefilter which collects larger particles. Finer particles are then subjected to an intense electrostatic charge by the Ionizer. These ionized particles are stripped from the airstream by the charged field of the Collection Cell. Collected grease agglomerates into larger droplets which are drained into the sump. |
